- 2 eggs (room temperature)
- 8 tbsp unsalted butter softened
- 2/3 cup sugar
- 3 ripe bananas
- 1 1/2 cup all purpose flour
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup dark chocolate chips
Preheat over to 350 F and line up 12-count muffin baking cups
In the mixing bowl, cream together butter with sugar. Then add 2 lightly beaten eggs.
Continue to add mashed bananas and vanilla extract. Mix until all blended and combined.
In a separate bowl, whisk together flour, baking soda, and salt.
Mix the dry ingredients into wet ingredients until incorporated.
Fold chocolate chips.
Divide batter evenly into 12-count muffin baking cups.
Bake for 30 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
