Chocolate Chip Banana Muffins Recipe

Ingredients
  

  • 2 eggs (room temperature)
  • 8 tbsp unsalted butter softened
  • 2/3 cup sugar
  • 3 ripe bananas
  • 1 1/2 cup all purpose flour
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dark chocolate chips

Instructions
 

  • Preheat over to 350 F and line up 12-count muffin baking cups
  • In the mixing bowl, cream together butter with sugar. Then add 2 lightly beaten eggs.
  • Continue to add mashed bananas and vanilla extract. Mix until all blended and combined.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Mix the dry ingredients into wet ingredients until incorporated.
  • Fold chocolate chips.
  • Divide batter evenly into 12-count muffin baking cups.
  • Bake for 30 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
