Whisk eggs yolk with a half cup of sugar until creamy. Set aside.
Mix durian puree with condensed milk until well combined.
In the large bowl, combine durian blended and eggs yolk mixture and whisk it until smooth.
Next sift in the flour, baking powder, salt, and whisk untill no visible lumps and becomes creamy. Set aside.
Preheat oven to 325 degrees and prepare cupcake liners. This recipe will yeild around 17-18 cupcakes
In the large bowl, beats eggs white with remaining sugar till it reaches stiff peaks
Using a spatular, gently fold 1/3 the meringues into cake mixture and repeat the steps for the rest of meringues until well combined. Do not deflate the eggs white.
Carefully scoop the cake batter into cupcake liners and bake for 15 minutes
Remove from the oven and let cool completely.
