Vietnamese Roti Chicken Recipe (GA ROTI)

Rotisserie chicken simmered in coconut sauce.

Ingredients
  

  • 3 lbs chicken thigh boned in
  • 2 cups coconut water
  • 3 tbsp garlic chopped
  • 1 tbsp fish sauce
  • 2 tbsp soy sauce
  • 2 tbsp mushroom seasoning
  • 2 tbsp oyster sauce
  • 1 tbsp Vietnamese caramel coconut sauce
  • 1 tbsp granulated sugar
  • 1 tbsp ground pepper
  • 2 tbsp olive oil
  • 1/2 yellow onion sliced

Instructions
 

  • Rinse chicken well and pat dry.
  • In the large bowl, combine garlic, fish sauce, oyster sauce, sugar, caramel sauce, ground pepper, soy sauce, mushroom seasoning. Marinate for at least 2 hours or longer.
  • Heat oil in the large skillet over medium heat, add onion and cook until it fragant
  • Continue to add the marinated chicken, sear both sides until it's golden brown.
  • Add the remaining sauce and coconut water in the skillet.
  • Turn the heat to low and simmer for another 20 minutes or till it is cooked to your preference. Do not cover

To Serve:

  • Toast bagugette
  • Jasmine steamed rice
