Vietnamese Roti Chicken Recipe (GA ROTI)
Rotisserie chicken simmered in coconut sauce.

- 3 lbs chicken thigh boned in
- 2 cups coconut water
- 3 tbsp garlic chopped
- 1 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp mushroom seasoning
- 2 tbsp oyster sauce
- 1 tbsp Vietnamese caramel coconut sauce
- 1 tbsp granulated sugar
- 1 tbsp ground pepper
- 2 tbsp olive oil
- 1/2 yellow onion sliced
Rinse chicken well and pat dry.
In the large bowl, combine garlic, fish sauce, oyster sauce, sugar, caramel sauce, ground pepper, soy sauce, mushroom seasoning. Marinate for at least 2 hours or longer.
Heat oil in the large skillet over medium heat, add onion and cook until it fragant
Continue to add the marinated chicken, sear both sides until it's golden brown.
Add the remaining sauce and coconut water in the skillet.
Turn the heat to low and simmer for another 20 minutes or till it is cooked to your preference. Do not cover
