My favorite Mexican cuisine has to be Chile Verde. It is made with pork shoulder simmered in chile Verde sauce. I actually discovered this dish through my husband. He introduced me years back. When I go to Mexican restaurants, I typically order tacos or burritos only. It’s surprisingly not too hard to make. There are many recipes out there but this is one that will be easy and delicious.

If you want to add extra spicy you can blend the tomatillo sauce with other peppers such as habanero.

It seems like a lot of work in preparation but trusts me it’s worth it.

I love to serve it in a bowl of Spanish rice. My husband loves to eat with tortillas.
