I know I am kinda lacking on update recipes for you guys. I am a Mommy of two growing kids so my time has been dedicated to them. But I promise I will find times to give you all my quick and easy comfort food.
Vietnamese Roti Chicken is of well-known comfort food. Everyone will enjoy this dish when you make it. The best part is you can eat this any meal of the day. For breakfast, people often refer to eating with french toast baguette thought.
As you have known, our Vietnamese cuisine is always packed full of flavors and spices. Each dish we make can contain salt, spicy, sweet…etc. There is no right or wrong when you cook Vietnamese food. Just play along with the flavors and adjust them to your liking.
However, there are essentials seasoning you should have in your pantry when you want to make Vietnamese dishes. I guarantee you will need to use at least one in every dish. In fact, in this recipe, we will use all of them.
They are fish sauce, soy sauce, mushroom seasoning, and Vietnamese caramel coconut sauce.

Vietnamese Roti Chicken Recipe (GA ROTI)
Ingredients
- 3 lbs chicken thigh boned in
- 2 cups coconut water
- 3 tbsp garlic chopped
- 1 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp mushroom seasoning
- 2 tbsp oyster sauce
- 1 tbsp Vietnamese caramel coconut sauce
- 1 tbsp granulated sugar
- 1 tbsp ground pepper
- 2 tbsp olive oil
- 1/2 yellow onion sliced
Instructions
- Rinse chicken well and pat dry.
- In the large bowl, combine garlic, fish sauce, oyster sauce, sugar, caramel sauce, ground pepper, soy sauce, mushroom seasoning. Marinate for at least 2 hours or longer.
- Heat oil in the large skillet over medium heat, add onion and cook until it fragant
- Continue to add the marinated chicken, sear both sides until it's golden brown.
- Add the remaining sauce and coconut water in the skillet.
- Turn the heat to low and simmer for another 20 minutes or till it is cooked to your preference. Do not cover
To Serve:
- Toast bagugette
- Jasmine steamed rice
