I think I found my favorite cupcake.  This recipe is heavenly delicious.  The cupcake is so moist, not dense and heavy.  


The typical cupcake, I will normally only have one but I cannot stop eating these.  


Cream cheese goes so well with durian. It’s the creamy texture like ice cream and you can just enjoy by itself.I have been substituted peanut with pistachios in my recipe lately.  It’s fun and adds a different flavor to my baking. 


If you are a durian lover like me, you must try to bake it. It’s easy enough too.


You can get durian at almost all Asian markets.  To make a puree, simply just blend it in the blender.

Durian Chiffon Cupcakes Recipe

Very fresh, moist, airy cupcake with durian cream cheese frosting topped with pistachios

Servings 17 cupcakes

Ingredients
  

  • 6 eggs yolk room temperature
  • 6 eggs white room temperature
  • 1 cup sugar
  • 1 cup fresh durian pureed
  • 4 tbsp condensed milk
  • 3 tbsp vegetable oil
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder

Durian Cream Cheese Frosting:

  • 1/2 cup fresh durian pureed
  • 8 oz cream cheese softened
  • 3 tbsp heavy whipped cream
  • 3 tbsp powdered sugar

Instructions
 

  • Whisk eggs yolk with a half cup of sugar until creamy. Set aside.
  • Mix durian puree with condensed milk until well combined.
  • In the large bowl, combine durian blended and eggs yolk mixture and whisk it until smooth.
  • Next sift in the flour, baking powder, salt, and whisk untill no visible lumps and becomes creamy. Set aside.
  • Preheat oven to 325 degrees and prepare cupcake liners. This recipe will yeild around 17-18 cupcakes
  • In the large bowl, beats eggs white with remaining sugar till it reaches stiff peaks
  • Using a spatular, gently fold 1/3 the meringues into cake mixture and repeat the steps for the rest of meringues until well combined. Do not deflate the eggs white.
  • Carefully scoop the cake batter into cupcake liners and bake for 15 minutes
  • Remove from the oven and let cool completely.

Durian Cream Cheese Frosting:

  • Beat cream cheese until creamy.
  • Add heavy whipped cream and continue to beat at medium speed.
  • Slowly add one tablespoon of sugar at a time and beat until smooth.

Assemble Cupcakes:

  • Add frosting on the cupcake and topped with pistachino crumbs.
